Veggies You Can Still Plant in Late Summer
Root vegetables are some of the best things to plant in late summer for a fall and early winter crop. From fast-growing radishes that you can pull throughout the remaining growing season to carrots that become sweeter once winter hits, there are a wide variety of fresh produce options you can grow.

Harvesting Tips 101
It’s one thing to tend to your garden and nurture the growth, but once things are growing, then what? It’s always important to not only prune as you go according to the crop, but to harvest your veggies at their peak flavor and nutritional value.
With every variety of vegetable, the ripe time varies. Tomatoes can be picked once they’re fully ripened on the vine, or picked a little early and then set on a windowsill to mature, while other things such as watermelon and squash need to stay on the vine until they’re fully developed.
Beans
Before the seeds inside completely bulge out, harvest them when they’re close to full size. Beans should snap beautifully and remain pliable.
Carrots
Depending on the variety, carrots can be harvested 60-80 days after the seeds were planted. A one-inch diameter where the carrot begins to pop out of the soil, is a good indicator they’re ready.
Cucumbers
Harvest cucumbers when they’re still bright green and range from six to nine inches long.
Spinach
When leaves are roughly four to six inches long, you can start picking them. Pull whole plants, and harvest older leaves first.
